 About two years ago, I decided that I would try and eat vegetarian at least one day each week.  I’ve really taken to healthy eating (in moderation – meaning I still eat brownies) ever since reading You on a Diet by Dr. Oz several years ago.  I knew that I would never be able to go totally vegetarian because I like meat too much.  But, I also believe that something is better than nothing.  So, just because I can’t commit to doing it 100% of the time doesn’t mean I can’t improve myself by cutting back somewhat. 

 I picked up this cookbook at the library in hopes of finding something new in the side dish arena.  I don’t know about you, but I get really tired of the same old side dishes. 

 I liked this book.  There were at least a dozen recipes that I copied down to try.  Haven’t tried any of them yet, but when I do, I’ll publish a recipe that I like.
